This fresh domestic salmon is "roasted" at high temperatures in small batches using local apple logs and oak from the Santa Ynez Valley Vineyards.

Taste Profile: The ultimate combination of rich, buttery smoked salmon flavors. Bursting with butter and oak. Fantastic either cold or warm.

Size: Available in 2.75lbs - 3.25lbs sides.  Each side is portioned into approx 4oz pieces.  Approx. 12 portions per side.
